Ginger-Red Curry Dressing

Sweet and spicy, this Ginger-Red Curry Dressing goes with Asian inspired salads and doubles as a dipping sauce.
1 tablespoon ginger, peeled and diced
1 teaspoon red curry paste
1 teaspoon scallion, white, chopped
1 tablespoon fresh coriander, chopped
1 tablespoon red bell pepper, chopped
1 tablespoon brown sugar
5 tablespoons canola oil
1 tablespoon toasted sesame oil
4 tablespoons rice wine vinegar
Emulsify all of the ingredients with a food processor, blender or stick mixer.
