A culinary staple used in soups, sauces, risotto and much more. Chicken broth should be in every serious cooks freezer. Here’s a simple recipe for an unseasoned broth that can be used in any recipe calling for chicken broth.


bones from 1 roasted chicken
6 cups water

Place the water and chicken bones in a medium soup pot. Place the pot on high heat and as soon as the broth reaches a boil immediately reduce the heat to a low simmer. Do not allow the broth to boil or it will become cloudy. Simmer on low heat for 60 to 90 minutes. Strain and use immediately or cool and refrigerate or freeze.

Broth notes:

1. This recipe should yield 1 quart of unseasoned broth. Season according to the recipe it will be used in. For a straight chicken broth add about 1 teaspoon of salt.

2. If you end up with less than one quart of broth make up the difference by adding some water.
